Pasta Salad with Broccoli, Bacon, and Red Onion

Ever go to a potluck or cookout and there are literally 5 macaroni and potato salads each? Talk about overkill. I mean I love a good cold salad as much as the next person, but variety is much better. Why not take this salad instead? It works great for any type of gathering or even just a basic cookout at home with your family.

  • 1 lb rotini pasta, cooked
  • 3 c fresh broccoli, chopped
  • 1 c shredded cheddar cheese
  • 1/2 c roasted unsalted sunflower seeds (optional)
  • 1/2 c cooked bacon, crumbled
  • 1/4 c red onion, diced
  • 1 c mayonnaise or miracle whip
  • 1/4 c red wine vinegar
  • 1/4 c sugar
  1. Step 1: Place rotini in a large bowl. Add broccoli, cheese, sunflower seeds, bacon and onion to pasta.

    Step 2: In a small bowl, whisk together mayonnaise, vinegar, and sugar. Pour dressing over pasta mixture and toss to combine.

    Step 3: Cover and refrigerate at least 1 hour. Let stand at room temperature 15 minutes before serving.
