Kitchen Smack: Creamy Parmesan Cauliflower

I’m diabetic, which means I need to focus on eating healthier and lowering my carbs. I’ve been doing a pretty good job since I have been following a loose keto diet. I’m surprised the number of really good tasting and simple recipes I find that work for lower carbs and good taste. I have super sensitive taste buds (What one might call a super taster) so I really need food that has flavor. This recipe fits all of the above. Don’t be afraid to add your own twist. Enjoy!

Creamy Parmesan Cauliflower

Creamy Parmesan Cauliflower


  • 5 oz bacon
  • 1 head cauliflower
  • 1/2 tsp salt and pepper
  • 1/2 tsp cilantro
  • 4-5 cloves garlic or 1/2 tsp garlic salt
  • 1.5 c heavy whipping cream
  • 1/2 c mozzarella cheese shredded
  • 1/3 c Parmesan cheese shredded


  1. Fry the bacon in a large skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain.
  2. Drain most of the fat from the pan, leaving about 1-2 tbsp for added flavor. Add the cauliflower to the pan and season with salt and pepper.
  3. Scrape up any browned bits from the bottom of the pan, and cook while stirring occasionally, for about 8 minutes.
  4. Add in the garlic and stir. Cook for 1 minute. Pour in the cream, reduce heat down to low and simmer until tender.
  5. Add bacon, mozzarella, and Parmesan and stir. Cook until cheese melts and cauliflower is as tender as you like.
  6. Taste and add more salt and pepper if needed.
